A medley of flavors and my take on street-style Egg Fried Rice.

On most of my bike rides, two dishes have been constant: Dal Khichdi and Fried Rice. Both are comfort foods for me on long rides and provide me with enough fuel to finish the ride by early evening. I have tried and tasted both dishes wherever they are available. Egg Fried Rice remains my favourite. The one which is soaked in ample Schezwan Sauce and gives a spicy taste and is moist enough not to require an add-on like Chilli Sauce or Manchurian Gravy. I had the privilege of consuming the tastiest fried rice while on my ride to Ladakh; apart from that, the Fried Rice available at any street food stall in Lonavla tastes delicious (I always prefer the highly smoked street food version). I cooked some delicious Chilli Prawns last weekend, and yes, there was some Egg Fried Rice to go along with it, ensuring the Chilli Prawns were devoured to the last drop. Ingredients ( for 2 )

Rice – 200 gm
Carrots – 100 gm
Cabbage – 100 gm
Onions – 100 gm
Eggs – 3
Salad Oil – 50 ml
Tomato Ketchup – 25 ml
Schezwan Sauce – 25 ml
Soybean sauce – 20 ml
Salt – to taste

Method:

1 ) Cook rice till three fourths done. Set aside.
2 ) Shred vegetables. Heat oil. Add vegetables and sauté.
3 ) Add beaten eggs and scramble.
4 ) Add rice and fry for a few minutes. Add sauces. Cover and cook till done. Serve hot with chilli sauce and a side dish of choice.
