Last week, after my Sunday ride, I bought fresh mushrooms from Panvel Vegetable Market. I enjoy cooking mushrooms in many ways, including Mushroom Pakoras, Air-fried Mushrooms, Stir-fried Mushrooms, and my favourite—Mushroom Soup, which I shared the recipe for earlier. I was busy last weekend repairing both of my bikes, so I didn’t have time to prepare anything complicated. I decided to make a simple Subzi with Mushrooms and Potatoes, packed with umami flavour. My wife and kid both love mushrooms, so I planned to serve the Subzi with hot, fluffy Malabar Parothas. It turned out to be a delightful Sunday afternoon meal that we all enjoyed. Ingredients:
Mushrooms – 350 gms
Potatoes – 2 pcs
Onion – 1 large
Coriander powder – 1 tsp
Cumin Powder – 1 tsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1 tsp
Vegetable Masala – 1 tbsp
Vegetable Seasoning – 1/2 tsp
Soy Sauce – a few drops
Salt – to taste
Butter – 2 tbsp
Sesame Oil – 20 ml
Lime juice – 1 tsp
Method:
1 ) Dice the Mushrooms and potatoes and chop the onions. Set aside.
2 ) Heat butter in a pan and saute the mushrooms and potatoes till half done.
3 ) In another pan, heat oil. Sauté onions till crisp. Add the spices except the vegetable masala and saute further for a minute.
4 ) Add the mushrooms and potatoes, soy sauce, vegetable seasoning, salt and mix well. Add the vegetable masala. Cook on a slow fire for five minutes. Remove from fire. Add lime juice. Serve hot with Roti or Parathas.
