Quick recipe for Paneer Tikka with Pulao Rice

Those who follow my blog probably know I love combo meals. There are two main reasons: they save time on cooking complex dishes and help with portion control. Many followers have asked for a tasty, easy-to-make vegetarian recipe, so I decided to share a delicious combo of homemade grilled paneer tikka with pulao rice. Ingredients

For Paneer Tikka:

Paneer – 300 gms
Ginger-Garlic paste – 1 tbsp
Kashmiri Chilli Powder – 1 tbsp
Cinnamon powder – a pinch
Cardamom powder – a pinch
Lime Juice – 1 tbsp
Salt – 1 tsp
Curd – 1/2 cup
Tomato Ketchup – 2 tbsp
Butter – 1 tbsp

For Gravy:

Curd ( beaten ) – 1 cup ( 120 ml )
Turmeric powder – 1 tsp
Red Chilli Powder – 1/2 tsp
Coriander powder – 1 tsp
Oil – 20 ml
Vegetable stock – 1 cup ( 120 ml )
Onion ( finely chopped ) – 1 tbsp
Boiled Corn – 3 tbsp
Pepper ( chopped ) – 2 tbsp
Salt – a pinch

Biryani Rice – 300 gm
Pulao Masala – 1 tbsp

Method:

1 ) Cut paneer into cubes and set aside. Mix all the ingredients for the tikka in a bowl and marinate the cubes. Grill the Paneer Tikka for approximately 15 minutes at 425°F turning skewers in between.
2 ) Wash rice thoroughly. Add readymade pulao masala and cook.
3 ) Heat oil in a pan. Add boiled corn and pepper and saute for a minute. Remove and set aside.
4 ) In the same pan, saute onions. Add vegetable stock and beaten curd. Add coriander powder, red chilli powder, salt and cook for five minutes on a high flame till the gravy is thick. Remove from fire.
5 ) Serve the tikka with pulao rice and sauteed corn and pepper. Garnish with chopped coriander.
