How to cook village-style Egg & Prawn Curry

After indulging in an array of delicious starters and a plethora of buffet options on New Year’s Eve. It was finally time to unwind and savor the holiday spirit with a laid-back meal and a chilled beer, all while catching up on those Premier League matches that i had missed. For me, lunch is a simple fuss-free affair, and I have fondness for the heartwarming, rustic flavors of village-style cooking that can a dish on the table in no time. So, i decided to whip up a delightful rustic Egg & Prawn Curry – fiery and full of flavor, perfectly complimenting my chilled beer.

Prep Time – 10 minutes

Cook Time – 15 minutes

Serves – 3

Ingredients:

Prawns – 450 gms

Eggs – 3

Onions – 100 gms

Turmeric powder  – 1 tbsp

Extra Hot Red Chilli Powder – 3 tbsp ( I use the Satvam Brand which I source online. Gives a strong spicy punch. Feel free to use Chilli powder as per choice )

Green Chillies – 20 gm

Garlic – half pod

Cumin Seeds – 1 tbsp

Cloves – 1/2 tsp1

Kasuri Methi – 1/2 cup

Soyabean Oil – 30 ml

Garam Masala – a pinch

Salt – to taste

Instructions:

1 ) Boil the eggs. Clean wash and de vien the prawns. Apply little turmeric and set aside.

2 ) Grind half the green chillies, garlic, cumin and cloves to a paste.

3 ) Heat oil in a pan. Chop the onions. Fry them till they a browned well.

4 ) Add prawns. Add kasuri methi, turmeric powder, red chilli powder, chopped garlic, chopped green chilli and fry further. Add salt and a pinch of garam masala. Add water. Cover and cook for ten minutes on a slow fire.

5 ) Remove from flame. Add boiled eggs, Serve hot.
