Midweek meals can be quick yet rewarding. I strive to spend less time in the kitchen, as my Sunday ride planning begins on Wednesday. After contemplating what to cook for dinner, I decided on picture-perfect spaghetti in red sauce. It’s time for the sauce to shine as the star of the dish. My simple recipe elevates the sauce’s bold flavours, creating a truly delicious meal. By drenching the spaghetti in red sauce, the vibrant beauty of the dish emerges, delighting both the eye and the palate.

Cook Time: 10 mins
Serves – 2
Spaghetti – 120 gms
Tomatoes – 100 gms
Onion – 1
Garlic – 1/2 pod
Chilli flakes – 1 tbsp
Parmesan Cheese ( grated ) – 30 gms
Vegetable Stock – 20 ml
Italian seasoning – 2 tbsp
Ground Black Pepper – 1 tsp
Salt – to taste
Olive Oil – 15 ml
Instructions:
1 ) Boil the spaghetti and give it a nice cold water drench. Drain and set aside.
2 ) In the meantime, blanch the tomatoes. Grind the onions and garlic along with the chilli flakes to a fine paste. Set aside.
3 ) Peel off the tomatoes ( after blanching the tomatoes, instantly give it a cold water bath to retain the colour ) and blend them with a blender.
4 ) Heat oil in a pan. Saute the onion-garlic paste on a high flame for two minutes. Add the Tomato paste and saute further for a minute.
5 ) Add the vegetable stock and cook on a medium flame for five minutes.
6 ) Add the Italian seasoning, pepper and cheese. Mix well and saute again on a high flame till the sauce gets thick. Check for salt and add if required. Remove from flame.
7 ) Arrange the spaghetti on a dish and top the sauce over. Mix well and serve. Garnish with basil leaf for a colourful effect.
