This Sunday was dedicated to bike maintenance. I had a few tasks to tend to on my Himalayan, which my son was using, so I took care of its routine upkeep. There was quite a bit to do to make it ride-ready. By the time I finished, it was late afternoon, and later that evening, India vs Pakistan played in a T20 match. I decided to make some Vegetable Patties. I hadn’t prepared a tasty snack like this in a while, and it would be perfect to enjoy during the game, since dinner was just simple Sabudana Khichdi and Potato Puris (I’ll share the recipe soon). The Vegetable Patties are very easy and straightforward to make. As with other recipes, feel free to use any vegetables you like.

Serves – 4
Ingredients:
Potatoes – 800 gm
Bread – 80 gm
Green Peas – 100 gm (I have used canned peas )
Geeen chillies – 5 gm
Ginger – small pod
Onion – 100 gm
Coriander leaves – 100 gm
Lime juice – a few drops
Garam Masala – a pinch
Mango Powder – 1 tsp
Salt – to taste
Oil- for deep frying
Method:
1 ) Boil potatoes. Peel & mash.
2 ) Soak bread in water, squeze out the moisture and mix with potatoes. Add salt and lime juice.
3 ) Mash the peas and set aside. If using fresh, shell them and mash.
4 ) Grind green chillies and ginger.
5 ) Heat little oil in a pan. Add chopped onions and fry till loght brown, add ground green chillies and ginger.
6 ) Add peas and salt. Cook till peas are cooked.
7 ) When cooked, add chopped coriander leaves, garam masala and dry mango powder. Mix well.
8 ) Divide potatoes and peas into equal portions.
9 ) Shape potatoes as desired and stuff with peas. Bind the edges together and shape into rounds.
10 ) Deep fry till crisp and brown.
