How to whip-up a healthy breakfast – Avocado on Toast

I’m not much of a breakfast person usually, except for my cherished Sunday Morning Ride, which always wraps up with a delicious breakfast of Misal and Vada Pao. But on most days, I stick to a quick Protein Shake for breakfast. Over the weekend, my son brought home some ripe avocados, and I thought they’d be perfect for Avocados on Toast. For him, that seems to be his favourite Sunday morning treat too. A fresh, crisp slice of lightly toasted multi-grain bread topped with creamy avocado and a sunny-side-up egg feels like a wonderful way to kick off the weekend. My recipe is straightforward and simple, and I’ve even tried it with boiled eggs in some variations.

Serves- 2

Ingredients:

Avocado – 2
Eggs – 4
Garlic oil – 1 tbsp
Chopped Garlic – 1 tbsp
Onion powder – 1/2 tbsp
Multigrain Bread – 3 to 4 slices
Chilli flakes – as per choice
Salt – as per taste

Instructions:

1 ) Boil two eggs as per choice and set aside.
2 ) Cut avocados in half, remove the pit and scoop out the flesh.
3 ) Mash the avocado flesh with a fork. Add garlic oil, chopped garlic, onion powder and salt. Mix well.
4 ) Fry the eggs as per your choice. Spread the avocado on Toast and top it up with fried egg or boiled egg. Sprinkle with chilli flakes and serve.
