During my ride to Tawang, I had the opportunity to taste a staple breakfast of curried white peas and luchi, delicately spiced and cooked with generous portions of potatoes and chutney on the side. I sampled this dish throughout my journey from Assam to Arunachal Pradesh, and each preparation was unique and flavorful. One of the best luchi and subzi breakfasts I enjoyed was at a roadside dhaba deep inside Kaziranga Forest, which didn’t even have a name. On a cold morning at 6:30 a.m., I savored this delicious meal while chatting with the cook for more than an hour. In the back of my mind, a recipe was taking shape for what I would call Dhaba Style Aloo Mutter. I prefer using green peas, as they are a favorite in my home. I decided it would be great to share this delicious recipe with my subscribers, inspired by dhaba-style cooking. Last weekend, I made this dish and served it with steamed rice for a hearty Sunday night dinner.

Luchi & Subzi served at a roadside dhaba inside Kaziranga National Park
Prep Time – 15 minutes
Cook time – 15 minutes
Serves – 3
Ingredients:
Potatoes ( parboiled )- 250 gm
Green peas (I used frozen ) – 50 gm
Onions – 150 gm
Tomato puree – 100 ml ( 1/2 cup ) for a authentic taste, roast the puree in little oil till it turns into lumps and oozes oil.
Chilli – 2 nos
Cumin powder – 1 tsp
Coriander powder – 1 tbsp
Red Chilli powder – 1 tbsp
Turmeric – a pinch
Vegetable Masala – 1 tsp
Salt – to taste
Vegetable stock – 250 ml ( 2 cups )
Tomato – 1 ( chopped )
Oil – 40 ml
Method:
1 ) Grind the onions and chilli to a coarse paste.
2 ) Dice the potatoes and set aside.
3 ) Heat oil in a pan. Add the onion-chilli paste and fry till nicely brown.
4 ) Reduce the flame to the sim and add the dry spices and chopped tomato. Saute all bit. Add the green peas and tomato puree and mix well.
5 ) Add the potatoes and vegetable stock. Add salt. Cover and cook on slow flame for ten minutes. Once done, check whether the potatoes are cooked well. Serve hot with luchi, roti or rice.
