With the weekend rapidly approaching, I felt compelled to share an elaborate yet straightforward recipe for Roast Duck in Orange Sauce. Yesterday, after an early morning ride during the week, I visited a farm in Karjat where I purchased some fresh duck meat. On my return journey, I decided to prepare a delicious Roast Duck in Orange Sauce, combining fresh ingredients with a classic recipe to delight the senses.
Ingredients:
Duck ( sliced ) – 500
Butter – 30 gm
Brown stock – 200 ml
Chowmein Sauce – 20 ml (I used the Indo Chinese Chowmein Sauce sourced from Amazon. The traditional recipe uses Espagnole Sauce )
Oranges – 2
Lime – 1/2
Salt & Pepper – to taste
Method:
1 ) Clean duck. Season. Apply little butter and roast in a hot oven for 30 minutes. Remove and set aside.
2 ) Drain the fat. In a pan, add brown stock and chowmein sauce. Add the duck meat and braise till done and the gravy is thick.
3 ) Reduce the sauce to a stiff consistency and rub through a sieve.
4 ) Add juice of two oranges and half a lime along with a julienne of Orange rind. Re-heat a bit. Make sure not to boil.
5 ) Glaze the duck meat with sauce and serve on a bed of rice and braised vegetables of your choice.
