Since I opted out of my usual biking routine in the morning, I found myself with ample time to concoct an elaborate lunch. This leisurely preparation became the perfect excuse to enjoy a crisp, refreshing beer while indulging in a movie marathon.
Reflecting on my recent trip to Pune, where I savored delicious mutton soup over three delightful days, I felt a strong urge to recreate that comforting experience at home. A simple yet satisfying bowl of plain mutton soup quickly climbed to the top of my culinary agenda.
I lean towards a rustic recipe that highlights the natural flavors of the stock. My approach involves enriching it with a pinch of vibrant turmeric, which lends both color and warmth, then finishing it off with freshly ground black pepper and a touch of sea salt. Additionally, I was inspired to prepare the soup following a delightful lunch featuring a generous portion of keema kaleji, beautifully cooked in fragrant and spicy Saoji masala—an aromatic blend I cherish from my hometown of Nagpur.
To achieve the depth of flavor in the keema kaleji, I let the meat simmer gently in my slow cooker for about an hour, infusing it with bay leaves, whole cloves, and peppercorns, adhering to the traditional cooking methods I grew up with. This slow and steady approach allowed the meat to become tender and absorb all the spice nuances.
So, if you have the stock ready, transforming it into a delicious soup can be accomplished in less than five minutes, making it the perfect quick yet satisfying meal to end the day.
Ingredients ( for 3 )
Mutton Stock – 500 ml
Turmeric – a pinch
Sea Salt – as per taste
Black Pepper ( grounded ) – a pinch
Butter – 10 ml
Method:
1 ) Heat butter in a pan. Once it melts, add the stock and turmeric and give it a boil for 5 minutes.
2 ) Remove from flame. Season it with salt and pepper and serve piping hot, garnished with chopped scallions or fresh coriander.
