Sundays are very busy for me. By the time I finish at my cafe, it’s almost 11 pm. Exhausted, I don’t feel like cooking and usually opt for a light meal like soup or khichdi to end the day. On Sunday mornings, I visit the seafood market to see the best catch of the day. The crabs looked fresh and tempting, so I picked a few and went home planning to make a comforting Crab Soup paired with rice. At home, I prepared the crabs, removed the meat for the soup, and asked my cook to follow the recipe and have it ready for dinner. I enjoyed the meal while watching IPL game highlights. Since there was no morning bike ride due to the hot weather, I had extra time early in the day to visit the market. My cook did an excellent job preparing the dish as instructed. Ingredients:
Crabs - 6
Tomatoes - 3
Onion - 1
Capsicum - 1
Bay Leaf - 1
Butter - 2 tbsp
Salt - to taste
Pepper - to taste
Cheese - 2 tbsp ( grated )
Method:
1 ) Prepare crabs. Blanch tomatoes and chop. Chop onions and set aside.
2 ) Heat fat. Fry the crab meat lightly. Add chopped onion and capsicum. Saute for a minute.
3 ) Add tomatoes, bay leaf, salt and pepper to taste and about 1 litre of water. Cover and simmer for an hour. Serve hot garnished with cheese.
