It has been ages since I last cooked Noodles. All the while, I’ve been obsessed with Seafood, Meat, and other delicacies. After sharing a comforting recipe for Carrot Soup a few days ago, I wish to present you with another easy and comforting recipe for Tofu Noodles. A delightful recipe, especially for Vegetarians, with my usual spicy twist to make the best of your taste buds. Easy to cook with minimal ingredients, this dish is equally relished by kids alike. So go ahead and enjoy this highly satisfying meal, which can be opted for by Vegans too (kindly check the ingredients before trying the recipe). Ingredients:
Noodles – 150 gm
Tofu – 150 gm
Mushrooms – 50 gm
Chilli – 10 gms
Garlic – a few flakes
Sesame Oil – 20 ml
All-purpose Soy Sauce – 1 tbsp
All-purpose Hot Sauce – 1 tbsp
Salt – as per taste
Vegetable Stock – 2 tbsp
Sesame seeds & Coriander – for garnish
Instructions:
1 ) Cook noodles Al dente. Give a cold water wash and set aside.
2 ) Press, clean and dice the Tofu.
3 ) Finely chop garlic. Slice Mushrooms and chilli. Set aside.
4 ) Heat oil. Fry the tofu crisp. Remove and set aside.
5 ) To the same pan, add mushroom, garlic and chilli and fry for a minute on high flame.
6 ) Add soy sauce and hot sauce and fry further for a minute. Add noodles, mushroom and tofu, vegetable stock and salt & saute for a minute on high flame stirring continously. Make sure the consistency is dry. Remove from flame.
7 ) Serve hot garnisged with coriander and sesame seeds
Pro tip: Saute the mushrooms lightly in butter to add-on to the aroma and deliver a smoky flavor.
