Let’s talk about enjoying some comforting soup after a long ride. My preparations for the trip to Tirupati have begun, and I’m feeling quite anxious about heading out on my KTM for a solo journey to the sacred town of Tirupati to seek Lord Balaji’s blessings. While returning from a ride to Nere last weekend, we bought some hydroponically grown celery, and that’s when the idea of cooking a comforting carrot soup came to mind. So, let’s make some delicious and nourishing carrot soup. Happy cooking.
Serves: 2
Ingredients:
Carrots – 225 gm
Celery – 50 gm
Onion – 30 gm
Stock – 1/2 litre
Butter – 2 tbsp
Refined flour – 2 tbsp
Salt – to taste
Pepper – a pinch
Parmesan Cheese – 2 tbsp
Instructions:
1 ) Wash, scrape and cut the carrots as per your choice.
2 ) Chop the onion, wash and chop the celery.
3 ) Heat the stock in a pan. Add salt and pepper. Add the vegetables and simmer till smooth. Let it cool. Make a puree with a blender. Set aside.
4 ) Mix the flour with butter to form a smooth paste. Add to the soup and simmer for 5 to 10 minutes. Garnish with shredded Parmesan Cheese.
