Last night, I enjoyed attending our Executive Party at The Retreat Hotel & Convention Centre, a venue known for its elegant ambience and exceptional service. Upon arrival, I was greeted by a stunning display of starters, featuring succulent prawns and crispy chicken nuggets, which paired perfectly with a selection of refreshing lagers.
The highlight of the evening was undoubtedly the unique buffet dinner menu, offering an eclectic mix of Pan-Asian and Continental cuisine. I was particularly drawn to the vibrant Mexican fried rice, which was infused with a delightful blend of spices and topped with fresh vegetables. Other tempting options included gourmet pizzas, juicy burgers, and a variety of expertly crafted pastas, catering to a range of palates.
As I savored the flavors of the evening, I was reminded of my own recipe for Healthy Stir fried Tofu with Rice. This dish, rich in protein and perfect for vegetarians, serves as a hearty and nutritious alternative for those looking to embrace meatless Mondays. Its savory taste and satisfying texture make it a delicious way to switch up your typical meal routine.
Ingredients:
Tofu – 250 gms ( frozen and thawed for a crispy texture )
Broccoli- 100 gms
Garlic – 5 to 6 pods
Soya Sauce – 2 tbsp
Chinese seasoning – 1 tsp
Corn Starch – 2 tbsp
Vegetable stock – 120 ml ( 1 cup )
Salt – as per taste
Sesame Oil – 30 ml
Chilli paste – 1 tbsp
Sugar – 1 tbsp
Chilli flakes – 1 tbsp
Butter – 1 tbsp
Green Onion Curls – 3 tbsp
Tomato Ketchup – 1 tbsp ( adding Ketchup gives the the recipe a nice piquant taste, however you can eliminate this in case you don’t need )
Instructions:
1 ) Cut the tofu into cubes. Mix the cornstarch with little waterand coat the tofu. Fry the tofu in oil. Remove and drain excess oil.
2 ) Clean and cut the broccoli to florets. Chop the garlic. Set aside.
3 ) Stir-fry the broccoli in butter in a separate Pan and set aside.
4 ) In the other pan, add the garlic, soy sauce, chilli paste, and seasoning along with tomato ketchup. Saute for about two minutes and reduce the flame. Add the Tofu and mix well.
5 ) Add the stock. Add salt and sugar. Mix well and cook on a high flame till sauce thickens. Once done, remove from the flame. Add the chilli flakes and mix.
6 ) Serve on a bed of rice with broccoli alongside and garlicnish with lots of onion curls.
P.S: this is a hands down simple recipe and doesn’t need any fancy rice wine etc. Feel free to add the ingredients of your choice along with veggies. I have always consciously experimented on making the recipe simplest and easy to cook.
