While returning from a ride to Alibaug
Where the dusty path merges with the highway
I spotted two solitary hawkers
With loads of Mangoes
Their grin was as bright as the fruit skin
But behold my speed
And I zoomed past by,
The Mangoes were enticing
For me to flyby
A snap turn ensued
Followed by a revved throttle
Seconds later, I was at their cart
Bold and brazen
I ended up buying two dozen.

Ingredients:
Alphonso mango – 6
Whipping cream – 200ml
Sugar – 3 tbsp
1 ) Rinse and peel 2 medium-sized Alphonso mangoes. Chop them and add to a mixer or blender jar. You will need 2 cups of chopped mangoes. Make sure to use ripe and sweet mangoes, avoiding those that are fibrous.
2 ) Add 3 tablespoons of sugar. Blend till smooth.
3 ) Place whipping cream in a bowl with a bed of ice water. Beat well (I used my hand blender whisk attachment) until you get a stiff peak.
4 ) In a glass container layer pureed mango and beat fresh light cream.
Refrigerate for an hour covering with a cling wrap. Garnish with chopped mango.
