Balancing busy deadlines, I’ve been spending less time cooking and more at my desk, but that doesn’t stop me from sharing my love for recipes and adding my creative twist to traditional dishes. Last weekend was Bike Maintenance Day, so there was no Sunday ride, but I made the most of my limited time by whipping up a fresh, healthy salad—kind of like a Greek salad, but with my personal touch. I had a good chunk of feta cheese to use up, and of course, what’s a relaxing Sunday without some beer or wine? Feel free to try this salad whenever you want a quick, healthy meal to enjoy!
Prep time: 10 minutes
Cook time: 5 minutes
Serves – 2
Ingredients:
Lettuce – 3 to 4 leaves
Cucumber – 1 large
Tomato – 2
Feta cheese – 100 gms
Onion – 1/2 cup ( thinly sliced )
For the dressing:
Olive oil – 3 tbsp
Black pepper ( freshly ground ) – 1/2 tbsp
Oregano – 1/2 tbsp
Garlic – 1/2 tbsp ( finely chopped )
Sea salt – 1/2 tbsp
Lemon juice – 1/2 tbsp
Method:
1 ) Clean, wash and cut the vegetables and feta cheese as per choice. Gather the veggies on a salad plate.
2 ) In a bowl, mix all the ingredients for the dressing and whisk well. Serve the dressing alongside the salad or drizzle over the salad as per choice.
