Prawns in Sweet Chilli Sauce the easy way.

After a night of incessant rains that soaked the streets and filled the air with a fresh, earthy scent, my biking buddy and I decided it wasn’t wise to ride out for breakfast in such weather. Instead, we opted for a leisurely spin along Palm Beach Road, where the lush greenery shimmered with raindrops, and we stopped at our favourite roadside café, Prashant Corner, for a steaming cup of coffee.

As we sat there, savouring the rich aroma of our drinks and enjoying the chilly atmosphere brought on by the rain, my phone buzzed. It was my son calling, expressing his sudden craving for prawns for lunch. I was more than happy to accommodate his request, but I needed to whip up something quick and easy that wouldn’t be too labour-intensive while still being satisfyingly delicious.

That’s when my go-to recipe for Prawns in Sweet Chilli Sauce came to mind. This dish is not only delightful and crispy but also comes together in just a matter of minutes. With its perfect balance of sweet and spicy, it transforms what could be an ordinary meal into something reminiscent of a Michelin-star experience.

Ingredients –

Prawns – 450 gms
Cornflour – 30 gms
Egg – 1
Sweet Chilli Sauce – 3 tbsp
Vinegar – 20 ml
Soy Sauce – 3 tbsp
Chilli Flakes – 2 tbsp
Salt and Pepper – to taste
Chopped Ginger – 1 tbsp
Chopped Garlic – 1 tbsp
Sugar – 1tbsp
Tomato – 100 gm
Chilli Oil – 2 tbsp
Spring Onion – 50 gm
Sesame Oil – for frying and sauteing
Roasted Sesame Seeds – 2 tbsp
Spring onion ( finely chopped ) – 1/2 cup

Instructions:

1 ) Clean and devein prawns. Make a thick batter with Cornflour, Egg and water. Dip prawns in batter and fry till golden brown. Set aside.
2 ) Heat oil in a wok or pan, saute the garlic and ginger. Sauté for a minute. Add spring onion and saute further. Add the chopped tomato and puree it well by mashing it with a fork.
3 ) Add soy sauce, vinegar, sugar, salt and pepper. Add chilli sauce and cook till the gravy thickens. Remove from the flame, add chilli oil and chilli flakes. Mix well and pour over the fried prawns. Garnish with toasted sesame seeds.
