“Mushrooms are incredibly versatile. Much like humble potatoes, you can pair them with any other food to enhance its flavour and taste. For me, mushrooms have always been a top choice. They are a rich source of energy and dietary minerals and offer a distinct “umami” flavour regardless of how they’re cooked—whether stir-fried, boiled, grilled, baked, or used in a masala, the outcome is always delicious and wholesome. In this recipe, mushrooms take centre stage as the star ingredient and are combined with homemade masalas to create a healthy and flavorful meal. While I used table mushrooms in this recipe, feel free to use any edible mushroom of your choice. Tawa Mushroom is a dish that I have been making since my early days in the hotel industry and professional kitchens. This mushroom recipe competes with Mushroom Risotto in terms of taste. Cooking the mushrooms on a tawa (griddle) adds a unique aroma to the overall taste, but you can also cook it in a frying pan if you don’t have a tawa and still enjoy this delicious and healthy cuisine. Ingredients :
Table Mushrooms – 100 gms
Green Peas ( shelled ) – 1/2 cup
Onions – 1 ( big size )
Tomato – 1 ( small size )
Fresh Coriander leaves – ½ bunch
Green chillies – 2
Ginger – 1 small piece
Garlic – 2 flakes
Red chilli powder – 1 tbsp
Turmeric powder – a pinch
Coriander powder – 1 tsp
Garam Masala – a pinch
Vegetable stock – 20 ml
Oil – 20 ml
Fresh cream – 20 ml
Lime juice – 1 tbsp
Salt – to taste
Method :
1 ) Grind Onion, Tomato, Coriander leaves, green chilli, ginger-garlic to a paste and set aside.
2 ) Cut Mushrooms as per choice. I prefer slicing them, which makes them easier to consume with
Roti / Naan etc
3 ) Heat Oil on a Tawa or Pan. Add the ground paste and roast till brown. Add spices, and green peas and roast
further for 2 minutes on a high flame.
4 ) Add mushrooms and mix well. Add vegetable stock, fresh cream and salt. Cook for another 5
minutes on high flame. Remove from flame. Squeeze in lime juice and serve hot with Roti /
Naan / Paratha.
