The weekend was fantastic! I had tickets booked for “Mission Impossible: The Final Reckoning,” which was a late-night show that wrapped up around midnight. Earlier in the evening, there was plenty of action to catch up on in the Premier League. I was all set with my lager beer but wasn’t sure what to cook for the lengthy evening. I found some drumsticks and wings in the refrigerator, so I decided to make some crispy fried chicken. This is a fairly simple recipe: I fried the chicken first and then drizzled it with honey and soy sauce for a rich burst of umami flavor.
Prep Time – 10 minutes
Cook time – 20 minutes
Serves – 2
Ingredients:
Chicken ( drumsticks & wings ) – 500 gms
All-purpose Flour – 1/2 cup
Ginger-garlic paste – 2 tbsp
Onion-garlic powder – 1 tbsp
Salt – to taste
Sesame Oil – for deep frying
For the sauce:
Honey – 3 tbsp
Chicken stock – 60 ml ( 1/2 cup )
Soy sauce – 2 tbsp
Chilli Flakes – 1 tbsp
Chopped Garlic – 1 tsp
Method:
1 ) Defrost the chicken in case you are using the refrigerated ones. If using fresh, then wash and clean and set aside.
2 ) In a mixing bowl, mix the flour with ginger-garlic paste, onion-garlic powder and salt.
3 ) Heat oil in a pan ( should be sufficient enough for deep frying ). Drop the chicken pieces in the flour mixture and deep fry till golden brown and crisp. Drain excess oil and set aside.
4 ) In a separate Pan, heat 1 tbsp of oil, add chopped garlic and saute a bit. Add the stock and give it a boil. Reduce flame, add honey, soy sauce and chilli flakes. Mix well and saute on a high flame for five minutes making sure that the sauce gets reduced and of a thick consistency.
5 ) Remove from flame. Pour the sauce over the chicken and toss the chicken. Garnish with sesame seeds and fresh coriander.
