It’s Maniac Monday again, after a long pushy Sunday on the Grill, you don’t feel like hanging around the range and cooking an elaborate meal, plus if it’s raining, you feel like going in for some comfort food. That’s when my new recipe for Onion Rice steps in. This is an age-old recipe shared with me by my Grandma and packs a punch with its Maharashtrian flavours. The cute baby onions give a crunchy edge to the aromatic spices. A hugely satisfying meal, that leaves you with enough time to binge-watch your favourite series.
Baby onions / Button Onions – 8 to 10
Big onion – 1
Rice – 1.5 cup
Garlic cloves – 3 to 4
Curry leaves – one sprig
Cloves 3 to 4
Salt – as per taste
Red chilli powder – 1 tbsp
Turmeric – a pinch
Black masala – 1 teaspoon
Oil – 20 ml
Method:
1 ) Wash the rice for 3 to 4 times and keep it aside
2 ) Peel the baby onions and set aside. Chop the big onion and set aside.
3 ) Heat 20 ml oil in a Cooker and saute the onions, garlic, cloves and curry leaves. Then add rice to it and mix well.
4 )Add red chilli powder, Turmeric and salt and mix well.
5 ) Add 1.5 cups of water and black masala. Let it boil. Once done, lid the pressure cooker and cook for 8 to 10 minutes. ( two whistles )
