How to dish up a healthy Shrimp Salad

Over the past two weeks, I’ve embraced the joys of biking and the occasional indulgence in binge eating. Today’s Sunday ride was nothing short of spectacular. We journeyed along pristine roads toward the Ransai Dam, with the romantic, breezy weather enhancing our experience. At the top of the dam, we were rewarded with a breathtaking view of the lake.

Conversely, we encountered some fishermen who generously shared their day’s catch. I couldn’t resist buying some fresh fish, which will become a delightful dinner later. Returning home by noon left little time to prepare an elaborate meal, yet the vibrant memories of our refreshing ride filled my heart. The lush greenery along the route spoke to me, as each tree and leaf seemed to radiate joy.

Motivated, I decided to create a quick and healthy salad that embodies balance and satisfaction. My son, who adores shrimp, inspired me to craft a delicious Shrimp Salad. Here’s my simple and refreshing recipe that brings together health and flavor.

Prep time: 5 minutes
Cook time: 5 minutes

Serves – 2

Ingredients:

Shrimp – 250 gms
Lettuce – 50 gms
Cherry Tomatoes – 50 gms
Cheese – 20 gm
Butter – 1 tbsp
Seasoning – 1 tsp
Roasted Sesame Oil – 1 tbsp
Croutons – 1/2 cup
Lime juice – 1 tbsp

Instructions:

1 ) Toss the Shrimp in butter over a pan for 2 minutes on a high flame. Set aside.
2 ) Arrange the Lettuce in a Salad bowl. Cut the cherry tomatoes in half and add them to the bowl.
3 ) Add the Shrimp. Add seasoning. Drizzle the salad with roasted sesame oil and lime juice. Mix well. Add the croutons and garnish with shredded cheese.
