Every Monday, I do a quick inventory check of my refrigerator, and I often find a treasure trove of leftover chicken. This includes grilled favourites like Tandoori Chicken, Chicken Tikka, and Seekh Kebab. As a foodie, I appreciate these leftovers, especially on my unofficial “Not-Behind-the-Range Day,” which falls on Mondays.
After binge-watching my favourite shows on Sunday night, I often find myself staying up late, leaving little time to pack my lunch or cook dinner after a busy Monday at the office. Fortunately, this leftover chicken opens up a world of possibilities. With a bit of creativity, I can whip up salads, rolls, or quick on-the-go sandwiches.
While my top choice would be a sandwich, I’ve always been a huge fan of coffee shop sandwiches, especially those with an extra crunch. That’s why I’m excited to share a new recipe for a Grilled Chicken Sandwich that tastes just like the ones from your favourite coffee shop.
All you need are four simple ingredients: chicken, mayonnaise, cheese spread, and bread. This is one sandwich that you can enjoy just as the Earl of Sandwich did!

Cook Time – 5 minutes
Total time – 15 minutes

Ingredients :
Sandwich bread – 4 slices
Leftover chicken – 150 gms
Mayonnaise – 2 tbsp
Cheese spread – 2 tbsp
Salt – to taste
Pepper – a pinch
Oil – 1 tbsp
Method :
1 ) Cut bread into triangles and set aside.
2 ) Cut and shred the chicken roughly to shave. Heat oil and stir-fry the chicken for a minute on a high flame. This gives a nice crunchy flavour to the sandwich. You could also eliminate this process and mix it directly.
3 ) In a large bowl, mix the chicken with mayonnaise, cheese spread, salt and pepper. Spread
evenly on one part of the bread and top it up with another. Grill for 5 minutes and remove.
4 ) Serve with French fries and coleslaw as sides along with tomato ketchup if desired.
