I’m thinking of making an elaborate vegetarian lunch on this rainy Sunday. I have a new, tasty, and resourceful recipe for Malai Sandwich Curry that I think might steal the show. It’s a serious contender for the best recipe to cook on a weekend. This dish can also be called Vegetarian Egg Curry, even though it doesn’t contain any eggs. The well-crafted dumplings made of potatoes and paneer give it an appearance similar to eggs. I bet you could pass it off as Egg Curry based on its looks.
Ingredients
1) 2 onion big
2 ) 3 tomatoes medium size
3 ) 6 garlic cloves
4 ) 1 small piece of ginger
5 ) 5 curry leaves
6 ) 2 green chilly
7 ) 2tsp red chilli powder
8 )Salt as per taste
9 ) 2tsp coriander powder
10 ) 1/2tsp turmeric powder
11) 1tsp black masala
12 ) 3tbsp oil
13 ) 1 bay leaf
14 ) 1-inch cinnamon
Method
1) Grind the first 6 ingredients and set aside.
2) In a pan heat 3tbsp oil, add bay leaf cinnamon and then add paste to it.
3 ) Saute until the paste turns golden brown.
4) Add red chilli powder, turmeric powder, salt and, coriander powder and saute until you see the oil is releasing.
5 ) Add 150 ml of hot water, then let it simmer on low flame for another 10 minutes.
For the Sandwich
Ingredients
1 ) 1cup paneer, grated
2 ) 2potato boiled, grated
3 ) 1capsicum, finely chopped
4 ) 1/2 carrots, boiled, finely chopped
5 ) Salt as per taste
6 ) 2tbsp corn flour
7 ) 1/4tsp yellow colour
8 ) Oil for frying
Method
1) Firstly, in a bowl take 1 cup of paneer and yellow colour.
2 ) Mix well making sure everything is well combined.
3 ) Grease your hand with oil, prepare small ball-sized rounders and keep them aside.
4) To prepare the outer white layer of the egg, in a large bowl take a grated potato, chopped capsicum and carrot, corn flour, and salt.
5 ) Mix well making sure everything is well combined forming a dough.
6 ) Grease hands with oil and pinch a ball-sized mixture.
7 ) Roll and flatten slightly, place a small ball-sized prepared yolk.
8 ) Stuff in and prepare egg-shaped kofta.
9 ) Fry in hot oil, keeping the flame on medium
10 ) Fry the eggs until golden brown.
11) Drain the egg-shaped kofta and keep it aside.
12 ) Vertically Cut the egg into two pieces.
Pro tip: For a milder yet richer version, add 2 tbsp cashewnut paste while roasting the spices. Alternatively, you can add 2 tbsp of cooking cream while garnishing the dish.
