Wednesday night was fantastic! I had a great time with two of my closest friends, Abhay and Shiv. We have known each other for decades and share a common passion for food and drinks. We are always eager to explore new recipes and cuisines together.
We enjoyed several drinks at Otters Club and indulged in delicious finger snacks such as Keema Patti Samosa, Chicken Cutlets, and their standout dish—the Cheese Garlic Naan. This naan was served as a round, small bread and was absolutely scrumptious. I couldn’t get enough of it and ended up eating quite a few!

Inspired by our night out, I decided to create something similar at home using homemade roti, which led to the idea of Hari Bhari Roti. This recipe is quick to prepare and requires minimal ingredients and effort. One of the best things about this dish is that it’s perfect for an office meal or for kids’ lunchboxes.

Prep Time – 25 minutes
Cook Time – 10 minutes
Serves – 5
Onion finely chopped – 2 big size
Tomato finely chopped – 2 big size
Cauliflower finely chopped – 250 gms
Cabbage finely chopped – 250 gms
Coriander finely chopped – 500 gms
Red Chilli Powder 3 tsp
Coriander Powder 2 tsp
Salt as per taste
Turmeric Powder 1 tsp
Tawa Roti – 15 no
Procedure
1 ) Heat 2 teaspoon of oil in a pan on medium heat. Add onion tomato and saute for 2-3 minutes and then add the red chilli powder, turmeric powder, salt, coriander powder.
Saute on medium-low flame for 2 minutes.
2) Add cauliflower, cabbage, coriander leaves and mix well.
3) Let it cook for 4 to 5 minutes. And hari bhari sabji is ready.
4) Let it cool for approximately 20 minutes.
5) Put the roti on a hot tawa and spread the hari bhari sabji and again keep roti on it and repeat the same procedure till 3 layers are completed.
6) Drizzle some ghee or oil . Turn it to and fro to the other side and drizzle some more oil or ghee. Cook while pressing down on the edges with spatula so they cook well.
7) Slice the hari bhari roti into 4 pieces of triangles and serve hot.
