With rain progressing each day, the mood is set for some aromatic cuisine, preferably fried items like pakoras and samosas, and that doesn’t exclude the mains; a good shower of drizzle, and I experience this unquenchable urge to indulge in chilli-garlic noodles that burst with umami flavours. Culturekurry Kitchen is always busy on weekends, leaving no time for detailed cooking. So, my Sunday night dinner was spicy noodles, accompanied by a glass of rum. My noodle recipe is simple yet packs a punch in terms of heat (if you favour very spicy food like me) and tastes exactly like any roadside eatery. The strong aroma and the feeling of having piping hot noodles on a motorway are among my fondest memories whenever I ride to Lonavla during peak monsoon and stop for noodles and soup on Lonavla’s main road – these moments are etched into each journey. Now, let’s get the cooking range on and try making some flavourful Chilli Garlic Noodles.
Ingredients:
Noodles ( cooked ) – 400 gm
Garlic – 20 gms ( 1 large pod )
Green Chillies – 10 gm
Carrot – 1 ( 30 gm )
Scallions / Green onion – 20 gm
Cabbage – 20 gm
Roasted Sesame Seeds – 1 tsp
Corn Oil – 20 ml
Vegetable Stock – 30 ml (a quarter cup )
Ajino Motto – a pinch
Soy sauce – 2 tbsp
Red Chilli Sauce – 1 tbsp
Chinese five spice powder – a pinch
Salt – as per taste
Chopoed Coriander – 1 tbsp
Method:
1 ) Make sure to cook noodles in boiling salted water until almost tender. Drain and set aside.
2 ) Chop the garlic finely and cut cabbage and carrot to juliennes. Slit the green chilli & cut the scallion to roundels.
3 ) Heat oil in a pan. ( I prefer using a seasoned wok for a better experience )
4 ) Fry the garlic till crisp and well-browned. Remove from pan and set aside.
5 ) Toss the vegetables in oil for a minute and add sesame seeds.
6 ) Add the noodles. Add the sauces, ajino motto, five spice, salt and vegetable stock. Cook on a high flame for a minute, tossing the noodles frequently. Remove from flame.
7 ) Top the noodles with fried garlic and chopped coriander. Serve hot.
