Chaitra Navratri begins tomorrow, and many devotees will be fasting during this auspicious festival. Over the coming days, we will explore pure vegetarian cuisine that will enhance this joyous occasion and become the “Star of the Table.” Let’s kick off this auspicious period with a delicious dessert: Mango Phirnee! Since it’s mango season, I’m excited to indulge in as many Devgad Alphonsos as I can. This week, we have already shared the recipe for Mango Cream Overload. Now, let’s try this delectable Phirnee, which is sure to be a trendsetter during Navratri.
Cook time – 25 minutes
Servings – 4
Ingredients:
Milk – 250 ml
Mango Puree – 50 ml
Rice flour – 30 gm
Sugar – 60 gm ( in case using Aamras, then reduce the quantity of sugar accordingly )
Cashewnuts or Almonds – 15 gms
Cardamom – a pinch
Mango essence ( optional ) – a few drops
Method:
1 ) Mix the rice flour with a little cold milk and set aside.
2 ) Boil the remaining milk and add to the rice flour mixture.
3 ) Cook on slow flame till it becomes fairly thick.
4 ) Add sugar till it dissolves and the mix becomes thick.
5 ) Remove from flame, add mango puree, mango essence and cardamom. Mix well. Pour into the Dessert Bowl and refrigerate. Once Phirnee is sufficiently chilled, serve topped with Cashewnuts.
