Quick guide to a crisp Liver Fry Masala

Over the last three nights, Mumbai has been embraced by heavy rains, creating the perfect backdrop for a day of solitude at home on Saturday. I took this opportunity to savor piping hot samosas and bhajiyas alongside coffee, allowing myself to fully indulge in the moment. Sunday unfolded in a similar way. As I stepped out for groceries, the local samosa and vada pav vendor was dishing out crispy samosas amidst the gentle rain—a reminder to treat myself once more to this delightful snack.

After relishing a plate and finishing every last bite of the fried mirchi and dry chili coconut chutney, I was filled with a sense of satisfaction. Breakfast became a vibrant celebration, surrounded by neighbors and a lively group of taxi and auto drivers sharing their daily meal.

On my way back home, I picked up some chicken liver and decided to prepare a spicy liver fry masala to enjoy with my lager. In just five minutes, I created a crunchy and delicious dish, proving that minimal ingredients can yield maximum flavor. This little cooking adventure turned out to be a winning experience. Ingredients:

Chicken Liver – 200 gms
Onion – 1 large
Green Chillies – 3 pcs
Chopped Garlic – 1 tbsp
Tandoori Masala – 1 tbsp
Turmeric powder – 1 tsp
Soy Sauce – 1 tbsp
Salt – to taste
Sugar – 1 tbsp
Chopped coriander – for garnish
Oil – 20 ml

Instructions:

1 ) Steam the liver in a pressure cooker for three whistles. Set aside.
2 ) Chop the onion and green chillies.
3 ) Heat oil in a pan. Add the onion, chillies, garlic and turmeric & fry till crisp.
4 ) Add the chicken liver and fry further for a minute. Reduce flame and add Tandoori Masala, soy sauce, salt & sugar and saute on a high flame for a minute. Your crisp liver masala is ready. Garnish with chopped coriander and serve.
