Easy four step Mix Lime Rice

It’s Thirsty Thursday, and I’m craving something quick to prepare. It’s been a long time since I made a fragrant, tangy Lime Rice, so I decided today was the perfect day to try it out. Like my other recipes, this one has a twist—I added prawns and chicken to make it more nutritious and satisfying. My recent gym sessions are intense, so I need enough protein and carbs to energise me. This recipe was also inspired by my son’s desire to combine carbs with adequate protein for a balanced meal. The final dish was incredibly delicious, enhanced with umami flavours from Seaweed Sauce. Just a generous portion of plain, cold rice is all you need to turn this into a culinary delight.

Ingredients:

Biryani Rice ( cooked ) – 400 gms
Prawns – 100 gms
Boiled Chicken – 100 gms
Lime Juice – 2 tbsp
Turmeric powder – a pinch
Carrot – 30 gm
Pepper – 30 gms ( use vegetables as per choice )
Green Chilli – 5 gms
Seaweed sauce – 1/2 tsp
Chopped Scallion Leaves – 2 tbsp
Sesame Oil – 20 ml
Vegetable / Chicken Stock – 20 ml
Salt – to taste
Butter – 1 tbsp

Method:

1 ) Separate the rice with a spatula and make sure there are no lumps. Set aside.
2 ) Chop the vegetables.
3 ) Heat oil in a pan. Sitr fry the prawns and chicken till cooked. Add vegetables, lime juice & turmeric and fry further for a minute on a high flame.
4 ) Reduce flame. Add rice, a few drops of seaweed sauce and salt. Mix well. Add the stock and butter and saute for a minute on a high flame. Serve hot..
