The poet in me dreams of wings to fly, while the foodie in me craves wings to eat. Eventually, my hunger won out, and I hurried to my kitchen to create a new recipe for Smoky Hot Wings. As a hotelier, I don’t see much difference between Buffalo Wings and Hot Wings, with the latter being a spicier version of the former, as some experts say. I aimed for balance, wanting a zesty kick without setting my mouth on fire. The result was a delicious, smooth, and crispy chicken wing that could rival the best. I’m confident in this simple yet fantastic recipe. I think that frying the wings makes them more delectable, but you have the choice to bake or grill them. Additionally, unlike Buffalo wings which are cooked without coating, this recipe includes a coating that gives you something to munch on and provides a crispy texture similar to what you’d find at cafes.

Ingredients :
Chicken Wings – 250 gms
For the marinade :
Cornflour – 2 tbsp
Oil – 2 tbsp
Honey – 2 tbsp
Chilli powder – 1 tbsp
Garlic powder – 1 tbsp
For the sauce :
Garlic ( chopped ) – 1 tbsp
Ginger paste – 1 tbsp
Spring Onions ( chopped ) – 20 gm
Black Pepper powder – ½ tbsp
Cayenne pepper powder – ½ tbsp
Barbecue sauce – 2 tbsp ( I have used American Garden Brand, it is available in plain and smoky
version as well ) Featured here is a version in Sriracha sauce as well.
Chicken stock – 30 ml
Butter – 2 tbsp
Salt – to taste
Oil for frying
Method :
1 ) Clean the chicken wings. In a large bowl, mix all the ingredients for the marinade. Add the
Wings and marinate them well. Cover the bowl with a cling film and keep it in the refrigerator for
20 minutes.
2 ) In a non-stick pan, heat butter, add the chopped garlic, half of spring onions, and ginger paste
and saute for a minute on medium heat. Now add black pepper powder, cayenne pepper,
and chicken stock and heat on high flame till it boils and the stock reduces. Now add the barbeque
sauce and heat on a high flame for a minute or till you get a thick consistency. Remove from
flame and set aside. Make sure to keep the sauce warm.
3 ) Heat oil, and fry the chicken wings. Make sure that they are crisp and dark brown before
you remove them. This should take approximately 5 to 7 minutes (depending on the type of
chicken used, whether frozen or fresh ) Fresh chicken wings are always better.
4 ) Once done, drain the excess oil and place the wings on a serving plate. Top the wings with
the prepared sauce & garnish with the remaining spring onions and serve with any hot sauce of
your choice.
