It has been a long time since I last prepared a dish exclusively with paneer. Excess fenugreek (methi) was stored in the pantry, and I was fatigued by consuming methi parathas repeatedly. Thursday night is designated as vegetarian night at our residence, and I thought it appropriate to prepare some methi paneer to create an aromatic vegetarian dish. This is a healthy vegetarian option featuring the benefits of fenugreek and fresh, silky paneer that tempt one to indulge further. Consider trying this recipe for your upcoming weekend meal. Ingredients:
Paneer ( Cottage Cheese ) – 200 gm
Onions – 30 gm
Fenugreek leaves – 120 gm
Chilli powder – 1 tbsp
Garam Masala – 1 tbsp
Turmeric powder – 1/2 tbsp
Coriander seeds – 2 tbsp
Salt – to taste
Water – 120 ml
Oil – 50 ml
Lime juice – 1 tbsp
Method:
1 ) Add 1 tbsp of salt to fenugreek leaves and wash thoroughly.
2 ) Sequeeze out water and grind the fenugreek leaves.
3 ) Heat half the oil and fry onions.
4 ) Add the ground fenugreek leaves and spices ( except garam masala ) and fry for a minute stirring continously on high flame.
5 ) In the remaining oil, fry paneer cubes.
6) Add the paneer cubes and water to fenugreek. Cover and cook till gravy is thick.
7 ) Add garam masala and lime juice and remove from fire. Serve hot with Parathas or Naan..
