
No party is complete without a nice meaty preparation of Kebab, and that, if served with a tasty greasy masala, doubles up the flavour quotient. This rich recipe of Seekh Kebab Masala is certainly finger-licking and adds a complex yet varied culinary wit to your celebration. You can substitute any other Kebab or Tikka for my special masala gravy and have your signature dish.

Serves – 4
Ingredients :
( for the kebab )
Mutton – 500 gm
Onion – 50 gm
Cardamom – 2 to 3
Cloves – 5 to 6
Ginger – a small piece
Mustard seeds – a pinch
Cumin – a pinch
Coriander – 5 gm
Garlic – a few flakes
Salt – to taste
Egg – 1
Fat – 30 gm
Method :
- Wash and mince meat.
- Grind together all the spices. Add meat and salt and grind well. Bind with beaten egg.
- Divide the mixture into even-sized balls.
- Grease skewers. Roll balls onto skewers.
- Pour melted fat/butter over and grill.
( for the masala )
Onion – 40 gm
Cashew nuts – 10 gm
Coriander – a few sprigs
Green Chilli – 4 to 5
Ginger-Garlic paste – 1 tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Clove powder – a pinch
Turmeric powder – a pinch
Cinnamon, Cardamom & Star anise powder – ½ tsp
Garam Masala – a pinch
Salt – to taste
Oil – 30 ml
Method : - Grind onion, cashew nuts, coriander and green chillies to a coarse paste.
- Heat oil. Fry the paste till golden brown for about 5 minutes.
- Add ginger-garlic paste and fry further for 2 minutes on high flame stirring continuously.
- Reduce flame to sim and add the spices and seasoning. Fry till nicely done and you get
an even dark brown coat on the masala. - Add the Kebab and simmer for 5 mins. Remove from flame and serve hot with Roti or
Paratha.
