Last week, we delighted in the vibrant flavours of Hari Tuvar Ki Subzi, and this week, we’re excited to embark on a culinary journey with Tuvar ka Pulao. With the mercury dipping and a chill in the air, it’s the perfect time to indulge in cosy comfort food that warms both the heart and soul.
As I prepare this dish, I’m reminded of the abundance of fresh green vegetables and nutritious pulses that are not only good for the body but also bring a sense of tranquility to the mind. This dish takes me back to my childhood, evoking a wave of nostalgia as I recall my mother’s kitchen, where the aroma of this comforting recipe would fill the air. During the winter months, she would make this dish at least once a week, always using the freshest tuvar, which she would carefully shell from their pods.
In this flavorful recipe, the tender tuvar shines brilliantly, complemented by the warmth of spices and herbs. The pulao is served alongside a cooling mix of tempered green chillies in creamy yoghurt, creating a delightful balance of spice and richness that tantalizes the taste buds. Each bite encapsulates the essence of comfort food, reminding us that there’s nothing quite like the bliss that comes from a warm, hearty meal shared with loved ones.
Ingredients
2 cups Tuvar dana ( from fresh pods )
1 cup rice
7 medium size chopped garlic cloves
3 cloves
Coriander leaves
Grated coconut
2 tbsp red chilli powder
Salt as per taste
1 tsp black masala
Procedure
1 ) Wash rice 2 to 3 times and keep aside in a pressure cooker over medium flame and add 1.5 tbsp oil.
2 ) Add 1 tsp cumin seeds, cloves, chopped garlic, curry leaves and stir-fry for a few seconds.
3 ) Add washed rice and mix well for 1 min.
4 ) Add tuvar dana, red chilli powder, salt and mix well.
5 ) Add 2 cups of water and black masala and boil for 2 min and then cover with the lid till 2 whistles.
6 ) Garnish with coriander leaves and grated dry coconut
7 ) Serve with curd green chilly.
Tempered green chilly
Ingredients
1 ) Medium size chopped green chillies 8 to 10
2 ) 1 cup curd
3 ) 1/2 tsp turmeric powder
4 ) Coarsed ground yellow mustard 2 tsp
Procedure
1 ) Mix all ingredients well and keep for 45 min till it changes its colour from white to yellow. Serve with hot Tuvar Pulao.
