In earlier recipes, I have mentioned the use of stock for cooking soups. While a basic stock undoubtedly enhances the flavour of the soup, you can still make a delicious and satisfying soup without it. This simple recipe requires just four main ingredients and can be prepared in less than twenty minutes. Broccoli soup is a fantastic source of multivitamins and minerals, and it can be enjoyed as a hearty meal on its own. After all, there’s nothing a warm, steamy bowl of homemade soup can’t fix. Prep time – 5 minutes
Cook time – 20 minutes
Servings – 2 to 3
Ingredients :
Broccoli – 250 gm
Sliced Onions – 50 gm
Chopped Garlic – 10 gm
Chopped Ginger – 5 gm
Oil – 3 tbsp
Pepper – 5 gm
Instructions :
1 ) Heat oil in a saucepan and add peppercorns.
2 ) Saute the onions, ginger and garlic in oil till transparent and wash and roughly chop the
broccoli, use the stems as well. Add broccoli to the pan and saute it with onions.
3 ) When you smell the fragrance of broccoli, add a little water and allow it to cook. Be careful at
At this stage, the broccoli should not get discoloured and should be just soft.
4 ) Remove from flame, cool and turn to puree in a blender and strain the soup.
5 ) Reheat the soup, add Salt and crushed pepper, and avoid overboiling to retain the colour of the
soup.
6 ) Serve hot garnished with blanched broccoli florets and top it up with a dash of olive oil or cream.
