My son was craving a rich, mixed vegetable curry and asked me to make it. I used whatever I had in the fridge and created a hearty tomato-based, sweet and tangy curry that suits his taste. This nutrient-rich recipe is easy to prepare and tastes wholesome when served with hot, crispy Parathas or Steamed Rice. A mild vegetable curry has been my go-to for years, especially during long rides; it provides me with good nutrition and keeps me full till I reach my destination after covering more than 450 kilometres in a day. I usually have the curry with rice at a roadside dhaba, which makes for a satisfying meal. I enjoyed a delicious meal at National Highway Dhaba on the Nagpur-Sambhajinagar highway, and the vegetable curry was wonderfully delicious and tangy. I tried to recreate that in my version. Although Vegetable Jhalfrezi offers a similar taste, mine is slightly milder and creamier. Please share your feedback. Happy cooking!

Serves – 3
Ingredients:
Potatoes – 100 gms
Carrots – 75 gm
Beans – 50 gm
Broccoli – 50 gm
Green Peas – 50 gm
Tomatoes – 200 gm
Onion – 100 gm
Green Chillies – 5 gm
Kaju Kalmi Paste – 2 tbsp
Turmeric powder – 1 tsp
Coriander Powder – 1 tbsp
Red Chilli Powder – 1 tbsp
Vegetable Masala – 2 tbsp
Cinnamon powder – a pinch
Garam Masala – a pinch
Salt – to taste
Sugar – 1 tbsp
Oil – 40 ml
Method:
1 ) Dice the carrots and potatoes and cut broccoli into florets. Cut the beans in half.
2 ) Grind the tomatoes, onions and green chillies to a fine paste.
3 ) Parboil the green peas for five minutes. Strain and set aside.
4 ) Heat oil in a kadhai. Roast the ground paste till oil oozes out. Add kaju kalmi paste, turmeric powder, red chilli powder and fry on a slow flame for a minute.
5 ) Add the vegetables. Add cinnamon powder and vegetable masala along with salt and sugar. Mix well. Add garam masala and two cups of water. Cover and cook on a simmer flame till the vegetables are cooked. Remove from flame and serve hot, garnished with chopped coriander.
