I’m so excited that the monsoon has finally arrived in Mumbai! It’s such a delight to bask in the lovely petrichor scent mingling with the irresistible aromas of street food like Vada Pav and Kanda Bhajiya. Last weekend, with a chunk of mozzarella in the fridge and heavy rain outside, I decided to whip up my all-time favourite snack – Chilli Cheese Toast. I also indulged in Jeffrey Archer’s “Traitor’s Gate” while savouring the delightful taste of the cheese and bits of chilli in my toast. My simple and flavorful recipe for Chilli Cheese Toast is so versatile – you can use toppings like mushrooms or baby corn, but I always prefer the classic bell pepper and chilli combination. Ingredients :
Bread Slices – 3
Butter ( Salted ) – 2 tbsp
Garlic flakes ( finely chopped ) – 2
Green Chilli ( finely chopped ) – 1
Capsicum ( Chopped ) – 2 tbsp
Bell Pepper ( Chopped ) – 1 tbsp
Cheese – 30 gm
Method :
1 ) Cut bread into triangles and set aside.
2 ) In a large bowl, take butter and whisk well. Add finely chopped garlic flakes and mix well.
3 ) Top it on the bread and place it on a hot pan for 2 mins so that the garlic sets on the bread.
Press it with a spatula while on heat.
4 ) Remove from pan, and turn over so that the side with garlic and butter is facing down. Grate
cheese, add chopped veggies and mix well.
5 ) Garnish the bread with cheese mixture and grill in the oven for 1 minute. Remove.
6 ) Place the slices again on the pan and cover it with a lid. Let it roast for 3 minutes on medium
flame or till the bread gets crispy. Remove from pan and serve hot.
