The IPL starts tomorrow, which means more time for watching matches and less time in the kitchen, especially when it comes to weekend dinners. I enjoy having my meals along with a cold beer while relaxing with my family and my cat. This quick recipe for Roast Chicken with Garlic is a breeze to make if you have some grilled chicken ready in your staples. It doesn’t take much time to prepare from scratch either, but having some on hand is definitely a bonus. With just a few ingredients, this recipe is packed with umami flavours that will leave you wanting more.
Prep Time: 15 minutes ( if you have pre-cooked chicken )
Serves: 3 to 4
Ingredients:
Grilled / Tandoori Chicken – 1 kg
Garlic flakes – 1 pod
Agri ( Maharashtrian ) Masala / Meat masala – 1 tbsp
Ginger-garlic paste – 1 tbsp
Finely chopped green chillies – 1 tbsp
Red Chilli powder – 1 tsp
Chicken stock – 30 ml
Lemon juice – 1 tbsp
Salt – to taste
Oil – 2 tbsp
Instructions:
1 ) In case you have leftover grilled chicken, then grill it again for 5 minutes at 160 degrees.
2 ) Heat oil. Saute all the ingredients except lemon juice for two minutes on a high flame.
3 ) Reduce heat. Add the Chicken and salt along with the stock and cook again on a high flame for five minutes or till the stock drains out. Remove from flame. Pour lemon juice and mix well. Serve hot garnished with coriander.
In the absence of chicken stock, add hot water and a few drops of Liquid Seasoning. I prefer adding the stock along with Liquid Seasoning for a burst of Umami flavour.
