Sundays have always been my designated meat days, and there’s something utterly revitalizing about indulging in a robust batch of mutton. This week, I found myself craving a culinary adventure, imagining the fiery allure of Kolhapuri Mutton Curry. The thought of this spice-laden dish, bursting with flavors, paired perfectly with my favorite sips of vodka, ignited my enthusiasm. Picture it: the curry, rich and aromatic, served alongside steaming hot rice, creates an idyllic Sunday feast that dances on the palate.
This delightful idea struck me as I was plotting a weekend escape to the Radhanagri Wildlife Sanctuary near Kolhapur, where the vibrant culture and lush landscapes beckon. It’s time to embrace the vibrant essence of Kolhapuri cuisine, and I can’t wait to share my take on this electrifying Kolhapuri Mutton Curry!
Prep Time – 15 minutes
Cook Time – 45 to 60 minutes
Serves – 4
Ingredients:
Mutton – 500 gm
Ginger-garlic paste – 3 tbsp
Onions – 500 gm
Sesame seeds – 1/2 tbsp
Poppy seeds – 1/2 tbsp
Dry Coconut – 20 gm
Cumin – 1 tsp
Cloves – 2 to 3
Peppercorns – 1 tsp
Turmeric – 1/2 tsp
Chilli powder – 1 tbsp
Salt – to taste
Oil – 75 ml
Method:
1 ) Fry coriander, peppercorn, cumin, poppy, few onions and dry coconut lightly. Set aside and let it cool.
2 ) Grind all the above ingredients and mix Ginger-garlic paste. Set aside.
3 ) Heat half the oil in a pan and fry the mutton.
4 ) Add the remaining oil and fry about 350 gm of sliced onions till golden brown. Add the ground spices and fry further for five minutes.
5 ) Add turmeric the lightly fried mutton and mix well.
6 ) Add 3 cups of water, chilli powder and salt. Simmer and let it cook for approximately 45 minutes ( depending on the mutton ). Curry can be made thin as well by adding more hot water.
