The weekend is approaching, and here I am. Back from yesterday’s Independence ride held every year on the occasion of Independence Day. There’s Flag Hoisting early morning followed by a short ride of approximately 40 km radius circling the city and partly kissing the highway and that’s the most exciting part of a ride when you get to catch a glimpse of a long stretch of roads dotted with high electric poles going endlessly as far as your eyesight goes. The sight resembles a tuxedo, with neat evenly tarred roads on both sides and a hemline of a divider with lights all along. Then there are Dhabas lined up next to Petrol Stations, which display serpentine queues of Trucks and wagons. The waft of butter-fried topping is so powerful and enticing that even the fastest of riders can’t miss the olfactory pleasure of the few seconds that it takes to cross these Dhabas. I always miss the buttery, gooey Dhaba-style chicken served on highway dhabas. Loaded with lots of Amul Butter on top and served with crisp tandoori Rotis, this dish not only melts in your mouth but melts your heart as well. I’m giving this recipe a try and hope to recreate the smooth and spicy taste of Dhaba Chicken.

Serves – 4
Ingredients:
Chicken ( boneless ) – 500 gm ( usually, with bone chicken is used )
Onions – 50 gms
Tomatoes – 20 gms
Green chillies ( chopped ) – 4 pcs
Ginger – small pod
Black Peppercorns – 4 to 5
Cloves – 2 to 3
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Red Chilli powder – 1 tbsp
Cumin powder – 1 tsp
Cinnamon – 1 small stick
Cardamom – 2 pcs
Salt – to taste
Amul Butter – 30 gm
Oil – 20 mo
Like juice – 1 tbsp
Instructions :
1 ) Clean and dice chicken into small pieces ( approximately 1 – 1.5″ )
2 ) Heat half the butter in a pan and fry the chicken pieces till brown.
3 ) Grind the onions, tomatoes, ginger peppercorns and cloves to paste.
4 ) Heat oil, saute the paste and add chillies, cardamom, cinnamon. Saute further for 5 minutes.
Add the dry spices and saute a bit.
5 ) Add chicken, salt and a little water. Cover with lid and let it cook for 25 to 30 mins stirring
occasionally. Once done, squeeze in lime juice and serve hot.
