Creating a delicious dish is like composing a beautiful song – it takes effort and creativity. My recipe for Chicken Sukha (dry) is simple yet flavorful, requiring just 4 main ingredients and minimal spices. It’s a versatile dish that pairs well with drinks and complements stuffed parathas and naan. Be sure to have plenty of salted butter on hand to elevate the flavours of the chicken.

Ingredients :
Chicken – 500 gm
Amul Butter – 80 gm
Onions – 2 pcs
Goda masala – ½ tbsp
Turmeric powder – 1 teaspoon
Chilli powder – 1 tbsp
Black Pepper ( whole ) – 1 tbsp
Cumin – 1 teaspoon
Ginger – One ( 1″ ) piece
Garlic – 7 to 8 flakes
Lemon juice – 1 tbsp
Salt – to taste
Coriander – a few sprigs
Method :
1 ) Wash chicken pieces and set aside.
2 ) Chop the Onions, coriander and garlic finely.
3 ) Grind black pepper, cumin and ginger to coarse.
4 ) Heat half the butter in a non-stick pan. Add chopped onions and fry them till crisp brown.
5 ) Add turmeric powder, Red chilli powder, Goda masala and the ground spices and fry further
for 2 minutes.
6 ) Now add the chicken pieces lemon juice and half a cup of water along with the remaining
butter. Mix thoroughly. Cover with a tight lid and let it cook on a slow flame for approximately 30
mins. Keep checking occasionally and turning the pieces if they stick. If necessary, add just a bit
of water and continue.
7 ) After the stipulated time, remove the lid and check whether the chicken is cooked. Add Saltas per taste. I would recommend tasting the preparation first before adding salt since Amul Butter is salted. If need be, only then add salt. Remove from flame and serve hot, garnished with chopped coriander.
