With the warm weather on the rise, elaborate meals, especially those involving meat, feel less appealing. Mondays often bring a whirlwind of activity, and on days like these, I yearn for simplicity and comfort—something nourishing yet uncomplicated.
As I rummaged through my pantry, a vibrant collection of leftover vegetables caught my eye. Inspired by their colors and freshness, I decided it was the perfect moment to whip up a hearty and nourishing Vegetable Soup. This dish not only promises to be a feast for the eyes with its bright medley of hues but also delights the palate with its wholesome flavors. My super easy method eliminates the need to prepare stock which consumes about an hour of your time and yet delivers on taste. Mine is an easy ten-minute way to make stock and then spice it up with special ingredients using my recipe with a twist.
Prep Time – 5 minutes
Cook time – 15 minutes ( including time to make stock )
Serves – 2
Broccoli – 200 gms
Carrot – 100 gms
Green Peas – 30 gm
Cabbage – 50 gm
Spring onion – 25 gm
Garlic – a few flakes
Peppercorns – a few
Bay leaf – 1
Butter – 2 tbsp
Rock Salt – to taste
Maggi Magic Cube ( vegetable ) – 1
Instructions:
1 ) Wash and cut the vegetables as per choice.
2 ) Take a larger bottomed pan and about a litre of water. Add all the ingredients except salt and butter and let it boil for ten minutes.
3 ) Remove from flame and Strain the stock so that peppercorns and Bay leaf are separated. Set the veggies aside.
4 ) Heat butter on a pan and saute the vegetables for a minute. Add the stock and give it a nice boil for a minute. Remove from flame and check for seasoning. Add salt as per requirement. Serve hot.
