The Sunday ride this weekend was pure fun, especially since it was my last ride on my Royal Enfield Himalayan. Today, I will be handing over the keys to my son, Nihar, who is training to be a rider like me. I’m super excited to get my hands on my new machine, the KTM Adventure, and start a new journey together.
After the ride, we stopped by a farm in Nere Village, Panvel, and picked up some raw mangoes. I managed to collect half a dozen and was eager to try a new recipe that would showcase the greatness of this King of Fruits. I have previously shared some amazing mango recipes on my blog, like Mango Phirnee and Mango Cream Overload, which were a hit with my subscribers. They’re always asking for more recipes featuring this in-season fruit.
So, I thought, why not try something new and exciting like Mango Rice, more aptly named “Aamba Bhaat”? This dish offers a fresh take on mango, with a nice tangy taste that complements the chillies used in the recipe, creating an elevated flavour profile. Ingredients:
Raw mango green – 2 medium-size
Green chilly – 5 to 6
Dry red chilli – 7 to 8
Urad daal – 3tsp
Rice – 1.5 cup
Groundnut – 1/4th cup
Red chilly powder – 1/4th tsp
Coriander powder – 1/2 tsp
Salt as per taste
Garlic cloves – 10 to 12
Sugar as per taste
Curry leaves
Coriander leaves
Turmeric powder
Method:
1) In a large kadai heat oil. Add in 1 tsp mustard, 3 tsp urad dal, dry red chilli, garlic cloves, and a few curry leaves.
2) Furthermore, add 1/4 cup of fried peanuts and saute for a minute. Add in 1 cup raw mango, 2 green chilli and ¼ tsp turmeric, red chilli powder, coriander powder, sugar as per taste, salt as per taste. Saute for a minute or till the mango shrinks.
3) Add 1.5 cup cooked rice and salt to taste. Mix gently without breaking rice grains.
Cover and simmer for 2 minutes or till rice absorbs flavours.
4) For garnish add coriander leaves. Mix well and serve.
