This all-rounder snack is ready before you finish your drink. I can confidently say that you and your guests will love this super easy roasted potato dish, served with a simple dressing of coriander, garlic, and a drizzle of lemon juice. The initial process of pan-frying the potatoes before roasting gives them a crispy edge that you are sure to enjoy. Once this dish is on the table, I bet your second drink will be poured soon!
Ingredients ( for 2 )
Potatoes – 225 gm
Butter – 125 gm
Salt – to taste
Coriander ( chopped ) – 3 tbsp
Garlic ( chopped ) – 1 tbsp
Lemon juice – 1 tbsp
Method:
1 ) Wash potatoes thoroughly (I prefer with the skin/jacket; the classic recipe calls for peeled potatoes ). Cut them evenly.
2 ) Parboil the potatoes in salted water. Once done, drain and set aside.
3 ) For the dressing – Mix the coriander and garlic in a bowl along with lemon juice.
4 ) Heat Butter in a pan and add the potatoes. Saute till light brown.
5 ) Bake in an oven, turning sides in between. Cook till golden brown and the skin appears crisp.
6 ) Remove excess butter by using greasing paper. Serve hot topped with dressing.
