It’s Friday, and the weekend vibes are in the air! I have an exciting weekend planned, including my Sunday bike ride with fellow club members, binge-watching shows on Netflix, and catching up on the Premier League. With such a packed schedule, I won’t have much time to cook, so I’m thinking of whipping up some Beetroot Avocado Toasties. These toasties are not only quick to prepare but also full of flavour and nutritious. The umami flavours that come from drizzling a bit of chilli oil on top are simply amazing. A biking buddy recently gave me a fresh stash of arugula leaves from his farmhouse in Karjat, so I’ll be incorporating those into my toastie recipe as well.
Ingredients:
Beetroot ( boiled and mashed ) – 2
Avocado – 2
Cherry tomatoes – a few
Arugula leaves – for garnish
Ginger-garlic paste – 1/2 tsp
Lime juice – 1 tbsp
Olive oil – 1tbsp
Kosher salt – to taste
Crushed Black Pepper – a pinch
Multigrain Bread loaf – 1
Method:
1 ) Add Olive oil, lime juice, ginger-garlic paste and Kosher salt to the mashed beetroot. Mix well.
2 ) Cut the bread loaf into slices. Top it up with the beetroot mix. Add sliced Avocado, cherry tomato halves, and black pepper on top and dress with Arugula leaves. Your healthy Beetroot Toasties are ready to be consumed.
