I recently returned from a 500-kilometer ride to Murud and Dapoli, and I still feel fresh and ready for another adventure—thanks to my new mean machine, the KTM Adventure 390. It delivers rock-solid performance and a silky smooth ride, whether on-road or off-road.
I aim to bring that same synergy into my cooking: delicious yet effortless when it comes to preparation and execution. I got home before noon on Sunday, giving me plenty of time to whip up something that looks extravagant but is a breeze to prepare. Many friends and subscribers have asked for a simple recipe for Hotel-style Continental Chicken that can be ready before you finish your drink. So, I thought I’d share my five-star recipe for Roast Chicken with Broccoli and Butter Garlic Rice. This dish is super easy to prepare, whether in an oven or on the stovetop, and I guarantee you and your guests will be craving more!

Serves: 1 to 2
Ingredients:
Chicken Breast – 300 gm ( approx 2 )
Basic Continental Spice Mix ( Black Pepper, Fennel, Coriander Seed (Ground), Paprika, Oregano Leaf & Thyme. ) – 2 tbsp
Veggies ( broccoli, mushroom, baby corn, carrot, zucchini & french bean ) – 200 gms
Cold Rice – 300 gm
Chicken stock – 50 ml
Garlic paste – 1 tbsp
Garlic – 1 whole pod
Butter – 30 gms
Milk – 20 ml
Cornflour – 2 tbsp
Method:
1 ) Clean the chicken and pat dry. Rub a pinch of salt, a little melted butter and garlic paste and roast in the oven at 450 degrees for 15 minutes.
2 ) While the chicken is getting roasted, cut the veggies and set aside. Chop the garlic and free the rice from any lumps.
3 ) Once the chicken is done, remove it from the oven. In a pan take 1 tbsp of butter and saute half the garlic lightly. Add the cold rice and some spice mix and saute for a minute on high flame. Remove from fire and set aside.
4 ) Take another pan and add a little butter. Saute the veggies and add a little seasoning. Saute for two minutes on a high flame. Remove from flame and keep aside.
5 ) In the same pan, add the remaining butter and make a basic brown sauce using flour, milk and chicken stock. Let the sauce thicken a bit. Add the Chicken breast and chopped garlic and cook for two minutes on a medium flame. Top it up with spice mix and serve hot with Butter Garlic Rice.
The same recipe can be cooked in a pan as well. When cooking Chicken Breast in a pan, cover the pan with a lid and make sure to turn sides frequently.
In case chicken stock is not available, use ready stock cubes and mix it with a cup of hot water. Stir well and use as mentioned.
