I’m a big “Shrimpholic” and crave shrimp at any time of the day. While casually browsing through my travel albums, I stumbled upon my photos from the Pattaya tour. One photograph of fresh shrimp I enjoyed on Pattaya Beach particularly caught my eye and brought back wonderful memories. That shrimp was possibly the freshest I have ever tasted—straight from the ocean, lightly grilled on a portable grill, and served with sweet chilli sauce. It was absolute bliss.
As it’s midweek, I’m looking for an easy way to prepare a meal in the kitchen. I’ve shared many shrimp recipes in my previous blogs, including Pulao, Fried Rice, Shrimp Kadhai, and Tava Fry. This time, I want to share my recipe for Shrimp on Toast. It’s a breeze to make and packed with rich umami flavours. You need just three main ingredients, and voilà, you have “Heaven on a Toast”!
Prep Time – 5 minutes
Cook Time – 5 minutes
Serves – 2
Ingredients:
Parboiled Shrimp – 1 cup
Toast or Bread Slices – a few
Butter ( Salted ) – 1 tbsp
Roasted Chilli Oil – 1 tbsp
Honey – 1 tsp
Chinese or Italian Seasoning – 1/2 tbsp
Chilli flakes – 1/2 tsp
Lemon juice – and a few drops
Instructions:
1 ) In a bowl, mix chilli oil, Honey, seasoning and chilli flakes along with lemon juice and set aside.
2 ) Heat butter in a pan. Add shrimp and threaten them a bit with Heat. Make sure not to overcook. Remove from flame and serve hot on toast or crusty bread slices garnished with chopped coriander.
