The soup saga continues! As a self-proclaimed Soupholic, I’m always up for a warm bowl of soup. This preference is clear during my biking trips, where I often choose soup over heavier main dishes to keep my stomach happy while riding.
It’s Saturday, and for lunch, I enjoy a simple bowl of easy homemade soup, accompanied by either bread or soaked noodles for that satisfying feeling. Weekends tend to involve some binge drinking, so I like to keep my meals light to fully enjoy the drinks in the evening.
Thai-style noodle soup fits the bill perfectly; it satisfies my cravings for both meat and broth. The simplicity of this dish really appeals to my taste buds, which is why I end up making it quite often. My mantra is straightforward: just throw all the leftovers into a pot with flat rice noodles and meat broth, season it a bit, and voila! You have an amazing meal ready in just five minutes. What more could a glutton like me want?
Soaked in the brown broth
Dripping slowly like a Sloth,
Texture so rich
Tastebuds itch,
For a spoonful of taste
Chewing the meat
In a haste,
For I need more
Of this Stock galore,
Gelatin greased my throat
And noodles left afloat,
Down the chopsticks went
And grabbed the shreds,
Giving me fiver
Before diving again
For the chunk of liver,
What’s left was oodles
Of flat rice noodles,
With enough left
To soak and slurp
Excuse me
I’m gonna burp.

Ingredients ( for two persons )
Flat Rice Noodles – 1 cup ( I used the Thai pad noodles, feel free to use any )
Shredded Chicken – 1/2 cup
Mutton Liver – few chunks
Chopped Spring Onions – 1/2 cup
Chopped Cabbage – as per preference
Burnt Garlic – 2 tbsp
Crushed whole Pepper – a pinch
Meat broth – 2 cups
Chopped Coriander – 1 tbsp
Salt – to taste
Maggi Liquid Sauce – a few drops ( optional ) I use it to heighten the Umami flavour
Peanut / Soya bean oil – 2 tbsp
Instructions:
1 ) Heat pan and add Oil. Saute all the ingredients except noodles for two minutes. Add the broth and cook for another couple of minutes on a high flame.
2 ) Place noodles in the bowl. Top it up with the cooked broth and serve.
Feel free to use ingredients of your choice. I have used chicken and liver since I had leftovers. You can use shrimp, crab, Lobster etc. Vegetables can also be added as per choice.
