Voila. The weekend looks promising and the weather looks upbeat. With gargantuan proportions of cooking done over the last Diwali weekend, it’s time to relax, rejuvenate and rejoice with my behind-the-range accomplishment. I have cooked loads of Diwali snacks, also called Faral, namely Chakli, Chivda, Shankarpale, and two different types of Sev ( theekha & namkeen ) and of course, all this was aided by sipping copious amounts of Vodka and Beer. In between all this, my carnivore palate was missing out on something drool-worthy, and that’s when this glutton struck gold; rummaging through my refrigerator, I found some good old Bacon slices; not exactly in the mood for cooking something elaborate, I decided to try churning a nice and crunchy Bacon Bhurji. Check out my easy-to-cook recipe for a delicious Bacon Bhurji; the final product looks so amazing and inviting, with a nice golden brown hue that sets in with the addition of Apple Cider Vinegar. This dish is an all-rounder; you can consume it from Breakfast to Dinner, and yet ask for more. So go ahead and give this recipe a try. Happy Cooking.

Serves – 2
Ingredients:
Bacon ( preferably streaky ) – 300 gms
Onion – 1
Tomato – 1/2
Chopped Green Chillies – 1 tbsp
Turmeric powder – and pinch
Red Chilli powder – 1 tbsp
Sweet Red Chilli Sauce – 1 tbsp
Apple Cider Vinegar – 2 tbsp
Chicken stock – 30 ml
Salt – to taste
Butter (unsalted/white) – 20 gms
Method:
1 ) Slice and chop the Bacon and set aside.
2 ) Chop the onion and tomato finely.
3 ) Heat the butter in a pan. Add the chopped vegetables along with Chilli & turmeric powder and saute nicely till golden brown.
4 ) Add the Bacon and sweet Red chilli sauce and mix thoroughly. Now add the chicken stock, salt and Vinegar and mix well. Let it cook for 10 minutes on a slow flame. Let the stock drain out.
5 ) Remove from flame and serve hot.
