We’ve officially made it to midweek, and with Wednesday here, I’m buzzing with excitement about the upcoming Diwali weekend. It’s the perfect opportunity to prepare large meals to share with family and friends, and I love the idea of fully immersing myself in the festive spirit. With ample time to plan, I’m determined to create delicious lunches and dinners that will be filled with love, laughter, and cherished memories.
Today, I’ve decided to whip up a Grilled Chicken Breast that’s not only infused with a unique blend of fusion flavours but also bursting with umami richness. This dish is incredibly versatile and can be tailored to suit a variety of tastes, making it ideal for a festive gathering. The beauty of this recipe lies in its simplicity—despite being easy to prepare, it stands out as a true star of the dining table.

Cook time: 60 minutes
Serves: 1 to 2 persons
Ingredients:
Chicken breast – 300 gms
Bell pepper – 20 gms
Zucchini – 50 gms
Garlic – 1 big pod
Soy Sauce – 30 ml
Stir fry sauce – 2 tablespoon
Sriracha Sauce – 1 tablespoon
Pasta seasoning – 1 tablespoon
Oil – 20 ml
Salt – a pinch
Maggi Chicken cube – 1 piece
Butter – for basting
Method:
1 ) Wash and clean the chicken of any skin. Make a few slits and set aside.
2 ) Cut the bell peppers and zucchini. Saute them in butter for 2 minutes.
3 ) In a bowl, mix chopped garlic, all the sauces, oil and salt.
4 ) Dab the chicken with the mixture and rub Maggi Chicken Cube all across nicely.
5 ) Preheat the oven to 160 degrees and let it grill for about an hour. Keep basting the chicken every fifteen minutes with butter.
6 ) Once done, remove and garnish with pasta seasoning. Serve along with the tossed veggies.
