The rustic village-style Mutton Curry is a true game-changer for any mutton lover. Having experimented with countless ways to cook meat—using various spices, sauces, and methods like baking and grilling—I’ve discovered that nothing compares to the satisfaction of enjoying a few flavorful pieces of this delicious curry. It’s made with simple ingredients and is rich in juice, or “tarri,” which I find incredibly enticing. Just the mention of tarri evokes a flood of food-related emotions for me, and I can’t help but get excited.
Last weekend, I decided to recreate this recipe and added my unique twist by infusing a smoky aroma that mimics the essence of cooking over wood or coal.
Prep Time – 25 mins
Cook Time – 60 mins
Serves – 3
Ingredients:
Mutton ( curry cut ) – 500 gms
Big Onions – 4
Ginger Garlic paste – 25 gms
Turmeric powder – 4 tablespoon
Coarse Red Chilli powder – 20 gms
Green chillies – 20 gms
Salt – to taste
Mustard or Sesame Oil – 50 ml
Coriander – a few sprigs
Water – 750 ml to 1 litre ( depending upon your choice of Tarri / Curry – I prefer a water-like consistency, which is how the rustic recipe demands )
Method:
1 ) Wash and clean the mutton.
2 ) Apply Turmeric and ginger-garlic paste and set aside.
3 ) Slice onions and grind the chillies to paste.
4 ) Heat oil and fry the marinated Mutton till golden brown. Remove and set aside.
5 ) Fry the onions till light brown in color. Add turmeric and red chilli powder and saute further.
6 ) Add the mutton and green chilli paste with salt. Mix it well. Add half a litre of water and cover with a lid. Let it cook on slow fire.
7 ) Boil the remaining half litre of water and set it aside for adding gradually during further cooking.
8 ) After approximately 30 minutes, open the lid and add more water as per the consistency.
9 ) For the smoky aroma, cover and seal the lid with dough and keep a few pieces of charcoal on top. Let it cook for another 30 minutes. Remove from fire. Add some more hot water in case you need that watery consistency. Garnish with lots of coriander and serve.
