The Butcher offers preferred cuts of your choice,
Give the dish its voice.
Sheep, Goat or Lamb,
All cooked with joy and aplomb
Onions, Tomatoes and abundant roast spice
Gets out the aroma nice,
Slow cooking on fire and the juices drip
Taking you down a memory trip.
Doesn’t matter if it is curry or dry
A bite of the meat is worth the pry,
Pair it with Roti or Rice
Enjoy the dish cooked with spice.

Servings – 4
Ingredients :
Mutton – 500 gm
Onions – 450 gm
Green chillies – 20 gm
Ginger – 10 gm
Garlic – 6 cloves
Tomatoes – 225 gm
Coriander leaves -½ bunch
Salt – to taste
Oil – 30 ml
Method :
1 ) Wash the Mutton and apply salt.
2 ) Boil in sufficient water to cook Mutton tender but dry.
3 ) Slice the onions, slit green chillies, slice the garlic and cut ginger into julienne. Chop the
coriander leaves.
4 ) Heat oil, add the mutton and sliced ingredients along with chopped tomatoes. Fry well.
5 ) Cook till dry, stirring occasionally.
